Pectinases are the group of enzymes that act to catalyze the degradation of pectic substances, either by desertification or depolymerization reactions. They are primarily produced by plants, bacteria, yeast, and fungus. Pectinases are classified into polygalacturonate (PG), pectin esterase (PE), and pectin lyase (PL) based on their mode of action on the substrate. Pectinase enzyme acts on the pectin and breakdowns the glycosidic bonds existing between the galacturonic acid monomers, which reduce the water holding capacity of pectin. Hence, high yield of juice is obtained using pectinase enzyme processing. This process is widely adopted for processing of various fruit juices including apple, orange, and pineapple.

In the juice processing, pectinase acts as the main agent that is responsible in juice destabilization in the existence of active pectin methyl esterase enzyme (PME) in fruits. It forms calcium pectate complexes and further causes the precipitation of cloud particles. This destabilization of pectin structure allows to proceed the filtration process and increases the total yield of fruits juice.
